About:China Tourist Visa

What happens later if I decide to change my hotel reservation to another hotel?

even though I have already turned in the application? Will we have to report the changes to them?

No, it is not necessary to do so. Once you get the L from embassy, it can be used for entry, and no one will check where you will stay at.
