20-day tourist visit

I'm planning on visiting China for a 20 day period. During this period I'd also like to visit Vietnam. Since my flight is Venice-Beijing and return Beijing-Venice, would I need a double entry visa (for my way back from Vietnam to Beijing)?

Also, I'm going on my own without any friends in China. Can I apply for V only with my airplane tickets, without invitation letter?
