Yes, you can. Take a train at SH Railway Station to Guangzhou East, where you can easily transfer to another train to Hong Kong. It is generally convenient, but the trip from SH to Guangzhou takes around 16h. To make sure that things will go smoothly, you are also advised to book the train tickets in advance.

Yes, there is train no. T99B/T100B, but it runs every two days and a single journey takes nearly 19h. You won't wish to take that!
