UAE citizens can enjoy 30 days visa free period in HK. You need to provide your passport, filled application form (ID9003A) affixed with a recent passport size photo, a copy of your passport's information page, financial statement (bank balance for example), travel itinerary (flight ticket).

It takes four to eight weeks to process your application.

You should submit your passport when you submit all your required documents. I think the embassy will keep it during the whole application process.
