Can I leave the airport without a visa?

I am a Canadian traveling from Nepal through Chengdu. I arrive late at night and depart in the morning. Is it required to leave the airport for the night and get a hotel room?

No, it is not necessary, you can easily apply for a stay permit at the airport (the Frontier Inspection) for the hotel.
