About:72-Hour Visa-Free Transit

Flying to Sydney via Shanghai from UK with a 2 day stop over.

Flight already booked - do I request a Transit Visa upon check-in at London Heathrow? Also on my return journey I have 7hours wait between flights, will I be able to enter Shanghai again during this time?

You are eligible for the 72 hours free transit in Shanghai. Thus, I don't think you will be checked in London.
