fly or train HK/Shanghai

We planned on flying to Shanghai from Hong Kong to save time. But, we now have an extra day. would a train trip back to Hong Kong be worth the extra time? Would we see any nice scenery? And how long would it take? We would like to travel first class if it is possible.
