If you get an entry stamp that reads 24 and you are staying for one day, your exit stamp will read 25. It's really very simple... and right there you have used up one 'entry'. If you want to enter the country one more time then you need one more entry permit. For example:
You enter China (say, from USA) via Shanghai and enjoy a few days there before you head off for some business in Shenzhen. It's Sunday. You check into your hotel. Everything is perfect !! So, your meetings start on Monday. Your Chinese friend says "Let me show you Hong Kong... It is so beautiful.. we can eat there and you can return in a few hours" Not a problem to enter Hong Kong (as a US passport holder) Fill out a little form and jump into the short line.
You enjoy the time in HK and after a few hours you are ready to return to your hotel in Shenzhen. IF you only received a one-time entry stamp you are not going to be able to re-enter. When you arrived in Shanghai you used up that one entry !! This happened to me BUT I had arranged for two stamps prior just so I could hop over to HK .... AND RETURN to my hotel at the border INSIDE of China. After the meetings were over on Wednesday I returned to Hong Kong, joined my friend there, and then flew to Boston.
There are details but they are not hard to calculate.
And it is not like if you are cute it won't matter. They follow rules.
