About:Chinese Embassy in U.K.

We have a night stopover in Hong Kong (from Sydney to London Heathrow)

do we need any type to go anywhere other than the airport? If we wanted to go for a meal in town for example or are we exempt as we are transitting through? Thank you

Yes, you are exempted from visa to HK for this transit. It will be no problem to go out of the airport.
