Yes, you need to apply for a tourist or transit visa for this purpose.

I understand I need a visa for that.

Since I only have a ticket from Shanghai to the USA (not a round trip ticket)
what will I need to provide to apply for a visa?
Should I ask the cruiseline to provide a letter stating I'm arriving into China by boat?

Hi, your ticket from Shanghai to USA is enough for application.
