entry question if leaving for HK

I am an American citizen. I have a Chinese F visa and am currently living in China. If I go to Hong Kong and come back, does that count as an exit and entry on my visa / passport?

Yes, leaving for Hong Kong counts an exit on your F visa. You need another entry if you return to mainland.
