Can I visit Shanghai without any visa?

Hello! My next flight is from Korea(Busan) to Vietnam(HCM City) and transit at Pudong Shanghai for 8 and 1/2 hours. I'm from Australia (permanent resident) with Vietnamese Passport.

You don't need a visa for that. Even you plan to go out of the airport to rest in a hotel, you may apply for a stay permit from frontier inspection station at the airport.
