Four to five days may be enough.
On the first day, you can visit the city downtown area when you arrive there and it needs at least one day to finish your tour.
On the second and third day, you can go to Longshen Terrace.
On the fourth day, Li-River Cruise is the must taking one. After that you will reach Yangshuo where you can spend one to two days. There you can also travel along Yulong River or take a boat on.
You can find a muslim hotel on Zhongshan Middle Road in Xiangshan District in Guilin. For the places to eat, there is a mosque there in Chongshan Road, so you can go there to find.
In Yangshuo, there is not a hotel especially for the muslim friends, but you can tell the hotel staff about your belief and they will help you. For food, I am not very clear about it and you can go to the West Street to find on your own, where you can find all kinds of food.
