Austin, you did not mention where do you intend to travel after Guilin. Simply speaking, it has to be a third country or eligible territory (eligible territories are Hong Kong, Taiwan and Macau). Also, it is very important to understand that taking a train to exit Hong Kong under 240 hour visa free transit is not allowed. You can, however, take a train from mainland China to Hong Kong under 240 hour visa free transit. In any case, there is a solution if you want to be a bit creative. I suggest you to take a ferry from Hong Kong to Macau and then from Macau to Shekou (Shenzhen neighborhood). This is an eligible way how to reach mainland China. When you arrive in Shenzhen you will take a train to Guilin. After your exploration of Guilin and some other areas of your choice, you will return by train to Hong Kong. As you can see, here we have three involved entities and that makes you eligible for 240 hour visa free transit. You should just have in mind that you will have to buy your Hong Kong bound train even before you exit Macau. In other words, you will be asked to present one at the time of your departure from Macau toward Shekou (Shenzhen) and also upon arrival in Shenzhen. So, when you arrive in Shenzhen, upon your presentation of your exit train ticket to Hong Kong, you will be granted a temporary entry permit and you will formally enter mainland China. When the time comes, you will just take that train you have bought your ticket for and you will travel to Hong Kong. Have a nice visit to China.
