About:Chinese Embassy in Canada

Do I definitely need an invitation or airplane ticket?

I am not certain of the travel date, because it depends on my husband's business trip whick may change. Can I apply for a visa without having to book the flight? I will be there sightseeing

Air ticket and hotel reservation are required for tourist visa application. But you can provide an invitation letter from a Chinese travel agency or an individual if you know any. Moreover, you can wait and apply with your husband at the same time. The processing for both tourist and business visa takes 4 working days only, and you can use rush service if you need.
