Do I need a letter from an agency in China to get a visa?

I'm flying over to China this fall for two weeks. I have round-trip plane tickets. I'll be going to several locations (but not Tibet) and I was planning on staying at youth hostels and travelling by plane and train or bus within China. Will it be difficult to get a visa without being part of a formal tour or without some letter from the hostels?

Basically, if you can not provide invitation letter from an agency, you can provide travel itinerary, return ticket and hotel reservation instead. Don't worry, it is easy to get a tourist visa even if you are an individual tourist. Hotel booking for few nights is ok if possible.
