I'm puzzled by your question, what do you mean re-entry stamp? Do you mean there is only one entry left on your China visa? You want to use the entry to return to Mainland China, but you are afraid that the entry will be used when you visit Macau from Hong Kong and return to Hong Kong, if I'm right, you don't need to worry about it, Spain passport holders don't need a visa to Hong Kong or Macau, you can use the entry on your visa to return to Mainland China

Thanks for the reply Nancy . When i applied for the visa in madrid I told them I wanted to visit Hong Kong and then return to the mainland so they gave me a TWO entry on my visa ,so that would be one when I arrive in Beijing and one when I return from hong kong to the mainland, Also I do have to worry as I am an english man that now lives in spain and I carry a british passport.

You don't need to worry about it even though you hold a British passport, U.K. nationals are exempt from a visa to Hong Kong / Macau for 180 days. You can use the 2-entry visa to go to Beijing, then go to Hong Kong, Macau, Hong Kong and at last return to Mainland China.
