You don't need a visa to Hong Kong for 11 days stay. South Africa passport holders are exempt from a visa to Hong Kong for up to 30 days. There is no problem for your two sons to hold their passport to enter Hong Kong, Hong Kong immigration requires the passport should have at least one month validity beyond the stay duration in Hong Kong. However, I'm afraid the South Africa immigration department won't let them to leave SA because their passports don't have at least 6 months validity.
