You can apply for China visa, Hong Kong visa and Macau visa through China embassy in Abu Dhabi or China consulate in Dubai according to consular districts. You'd better submit the application in person. If you can't come to the consulate, you have to ask someone else to do it for you. It takes 4 working days for visa processing.

The required documents are:
1. Original passport and copies of the data pages
2. UAE resident visa valid for more than 6 months and its copy
3. Application Form V.2011A and V.2011B
4. One passport photo

for China visa application:
A No-objection letter from your company stating your position, monthly or yearly salary;

For Hong Kong or Macau visa application:
The transportation arrangements, such as flight tickets
the hotel booking in Hong Kong or Macau
