If your stopover in Shanghai Pudong Airport or Shanghai Hongqiao Airport is less than 24 hours and you won't leave the airport, a transit visa is not required. Otherwise, you need a transit visa, you can apply it in Sydney if you are still there. It costs 50 Australian dollars for single entry transit visa, it takes 4 working days for processing, you can submit the visa application directly to China Visa Application Service Center in Sydney.
