About:Great Wall Sections

I am taking my children to Hong Kong for a holiday and want to travel up to see the Great Wall.

I was thinking of taking sleeper trains up to Beijing with maybe some stops along the way, is there a direct route or an indirect route with some real Chinese cultural stops, such as farming villages, along the way?

You mean stop and have sightview along the way by train from Hong Kong to Beijing? That's impossible. If you leave the train and do not get back when the train continue to run, your ticket will be invalid. If you want to make some stops, buy train ticket for each section.
