You can apply for a China tourist visa in Thailand. Required documents are your original passport, application forms for China visa with photo stuck to it (both V2011A and V2011B), visa fee is about AUD 60 per person for a double entry visa with 4 working days regular process. However, if you are not now in Australia, you'd better apply for China visas in advance and it is safer. China visa is valid for 3 months from issue date.
