Hello, we are travelling from South China to Beijing. We already have a 30 days single entry visa, but would like some more time. Can you apply for an extention of this visa anywhere in China, most likely we will be in Xi'an or Pingyao? Is this easy to do?

You can apply for extension of China visa at the Exit & Enter Department under Xian Public Security Bureau or Beijing Public Security Bureau, I don't know whether there is exit & enter department in Pingyao or not. In fact, you will be given a new visa with days of stay in China with 0 entry. It is not hard to get the extension.
