You can take the airport shuttle bus line 6A from the airport to Guangzhou East Railway station which has train to Hong Kong. The information about this shuttle bus is like this：
Runtime: 60 minutes
First Run/Final Run: 06:30 / the last flight arrival
Frequency: every 20 minutes
Ticket Fare: CNY20

You can buy the train ticket on the spot. It costs cny190. Well, you'd better book the train ticket in advance.
