Yes, you can definitely qualify for 240 hour visa free transit, but the immediate point before Shenzhen cannot be Hong Kong, but a third country or eligible territory (eligible territories are Hong Kong, Taiwan and Macau). In other words, if your itinerary looks like: UK - Shenzhen - Hong Kong, you are eligible or Vietnam - Shenzhen - Hong Kong you are eligible, but if the itinerary is Hong Kong - Shenzhen - Hong Kong, then you are not eligible. In case if your flight from, for example UK, has a landing somewhere in mainland China before Shenzhen, this is also acceptable, but in this case you will perform entry and 240 hour visa free transit formalities in that city upon your landing. In the end, it is absolutely essential that you buy your train ticket in advance, even before you start your journey toward Shenzhen. You will have to present that ticket (in reality a booking confirmation that will be stent to your email) in both UK (or some other country where you will depart toward China from) and in Shenzhen upon your landing. Please, keep in mind that you will really have to take exactly that train that you have bought your ticket for. Have a nice journey.
