About:Guangzhou Facts

Hi,
I was in Guangzhou last week and on Haizu, at the dried fish markets, found lots of dried black and grey caterpillar like things. Looking like charcoal. Those were really caterpillars and if yes, what kinds of those you eat there? I would very much like to know the names of those dried "things".
Thank you very much!
