From the airport to Disneyland, you can take bus S1 to tung chung first and then take tung chung line to sunny bay. Then take the disneyland resort to get there.

From Disneyland to the hotel, you can take mtr from Disneyland Resort Station - A to Hong Kong Station - E, then take bus 1A from central to No.18 Ice House Street. You can easily walk to the hotel.

My itenary wud be as:
Day 1- Airport to Disneyland
Day 2-Disneyland to Hotel Bishop Lei
Day 3- Hotel Bishop To Macau, back to Hotel in even
Day 4- To Oceanpark and back to Hotel, if we get time can thing for Peak.
Day-5- Shopping Day.
