I am looking to book a train from beijing to Guilin and wondering if I can go via shanghai and stay there for a few days. Can I book beijing to shanghai to guilin all on the one ticket with a two day stop over in Shanghai?

I am afraid that you can not book one ticket in this case. You need to book two train ticket as Beijing-Shanghai, Shanghai-Guilin. You can left two days before your next train journey to Guilin in Shanghai.
