1. Cab car fare may be about 250~300HKD from the airport to the hotel. I think you can also take bus A21 to get to this hotel which is much cheaper.
2. You could take bus E21A from Metropark Hotel Kowloon, Waterloo Road to Lantau Link Toll Plaza. Then transfer bus R8 there to Disneyland.
3. You could take bus 103 from Man Kee Mansion, Waterloo Road to Lady Ho Tung Hall, Pok Fu Lam Road. Transfer bus 973 there and get off at Hong Kong Country Club, Wong Chuk Hang Road. You will easily find the Ocean Park.
4. You can take mtr from Mongkok station to Central and transfer HK Island Line to Sheung Wan, then walk to HK-Macau Ferry Terminal to take ferry to Macau. It operates 24 hours so that you do not worry about the time.
5. The journey time by ferry to Macau is about one hour and costs around HKD150.
6. The hotel was located at Mongkok Commercial center which is also near to Tsim Sha Tsui. There is not many attractions near this hotel, but the transportation here is very convenient. You can easily get MTR or bus here to get to Hong Kong attractions(https://www.travelchinaguide.com/attraction/hongkong/) in other places. For a better trip in HK, you may see Hong Kong Tours(https://www.travelchinaguide.com/package/hongkong/) .
7. Hong Kong Weather(https://www.travelchinaguide.com/climate/hongkong.htm) is generally mild which won't be cold around mid january, with a temperature of about 14~19C.
8.I am not sure about the cab car fare, but it may be expensive. I think you can take mtr to Central and then walk to Lan Kwai Fong which is only about HKD10.5.
