About:Chinese Consulate in Auckland

My husband and I are Canadian Citizens and are holders of Canadian passports. We are currently in New Zealand for 4-5 more months.
Our plan is to travel to China on a one way ticket from Australia and take a train out of China to India.
How do we apply for a Chinese Visa? Can we apply for visitors visa here in New Zealand or do we have to do it through our Canadian Embassy in Canada (via mail)?
What is the invitation letter? Do we have to have this letter even for a visitors visa "L"?
and, another question.
Does the Chinese Visa include Tibet?

If you hold a passport other than New Zealand passport, please make sure you have a valid New Zealand Visa or Permit stamped on your current passport.
For a tourist visa to China, you need to provide any of the following: Travel itinerary prepared by travel agency, or copy of your airline ticket (e-ticket), or invitation letter from relatives, friends in China including the inviters' personal details and contact information if any. So, don't worry about this.
If you want to visit Tibet, you need a Tibet Entry Permit issued from Tibet Travel Bureau. And you are required to join a group tour since individual visitors are not allowed to visit Tibet. You can check Tibet Tours(https://www.travelchinaguide.com/tour/tibet/) as a reference to arrange your trip to China. The travel agency will handle the permit for you.
