It would be a little cold in Hong Kong in February, you can wear your winter clothes there, something like warm jackets, and warm shoes.
For the places youi mentioned, you need one day or two days at Disneyland, half a day for Ocean Park, half a day for big buddha and Po Lin Monastery and Ngong Ping, half a day for Wong Tai Sin Temple and half a day for Madame Tussauds and the Peak. You can make a one day tour to Shenzhen, the best things there are Window of the World, Splendid China and to shopping at Luohu Commercial City and Dongmen Area.
The best transport mode in Hong Kong is by MTR, you can take MTR to most of the attractions you listed.
You can take Bus A21 and get off at Mody Road and walk to the hotel.
You can taste the food at Temple Street, also there are some stores, and you can go to Ladies Street at Mong Kok.

OMG, for the places, you can use google map to locate each of them and then decide which one to go first and then second... that's easy~

The easiest transport to Shenzhen is taking MTR from Tsim Sha Tsui Station to Lo Wu Station, transfer at Mong Kok Station and Kowloon Tong Station, costs HKD36.5 per person, takes around 1 hour. To Window of the World and Splendid China, you can take Subway Line 1 and get off at Window of the World Station, Luohu Commercial City is at Luohu Boarder, you can see it once pass the customs. Dongmen is near Laojie Subway Station.

The bus stop of A21, I believe, is right beside your hotel.

I think you will do more research about the places you will go, right?
