About:China Visa

I hold a 1 year multiple entry business visa, as I will be required to travel to Shanghai on business several times over the next year.

But I also plan to travel to China as a tourist during this time. As I cannot hold both a business and tourist visa at the same time, I will therefore need to travel as a tourist while on my business visa.

When I arrive in China as a toursit, should I state the purpose of my visit as tourism or business (on landing card and to immigration officials)?

not necessary, you can travel in China on this business visa.

I will still need to fill in a landing card stating my reason for visiting China, and may also be asked by the immigration officials - my question is whether I should state the true purpose of my visit (tourism) or state business just because I'm travelling on a business visa?

State business just, or you may in trouble to be required a tourist visa. So, don't mention your true purpose, no one will check it out during the duration of stay in China.

And if the immigration people ask about the nature of the business, I should just lie and make something up?

Mr.Coco, you are too careful, please don't worry, the immigration people won't ask you the nature of Business, if you are asked, just lie and make something up. In fact, to Uk citizens, if you hold a valid Uk passport and valid China visa, you won't face any problem when you pass the custom.
