From the airport, you could take the Airport Express train to Hong Kong station firstly. Then, you could take a bus or a cab to the nearby Admiralty station. At the Exit B of it, you could catch the bus 629 to get to airport directly.

To the hotel, please take the bus back to Hong Kong station, where please take the metro Tung Chung Line and get off at the Olympic station where the hotel is just located.

To Disneyland, please take the metro Tung Chung Line to Sunny Bay station and then transfer to the Disneyland Resort Line to the park quickly.

Ps, if possible, I think you could go to the Disneyland firstly. Departing from the airport, it only takes you about HKD120 to get there by cab.
