No, this is not possible. Taking a train from Hong Kong toward mainland China, Shenzhen included, is not eligible under any visa free transit scheme and also it is not eligible if you plan to apply for a 5 day Shenzhen visa on arrival. It is interesting that a return from mainland China to Hong Kong is eligible for both visa free transit and 5 day Shenzhen visa on arrival. So, if you plan to visit just Shenzhen your by far best option is to arrive at Lo Wu / Luohu border crossing and to apply there for Shenzhen 5 days visa on arrival since its price is affordable 130 CNY. You can stay in Shenzhen only and you can return directly to Hong Kong by taking any border crossing and by taking any mean of transport, high speed train included. If you plan to go farther than Shenzhen, you should include Macau in your itinerary to create a situation that will be eligible for 240 hour visa free transit. You can take a ferry from Hong Kong to Macau and from Macau to Shekou in Shenzhen. Before your departure toward Shekou you will buy a train ticket from Shenzhen, Guangzhou or some other city to Hong Kong because you will be asked to present one as a proof that you will be really in a transit. So, when you arrive in Shekou, you can travel to different parts of mainland China, but you have to return from mainland China to Hpong Kong by exactly that train that you have bought your ticket for before your departure toward Shekou. Hope this helps and you will choose the option that suits you best.
