I will be staying at the Westin Hotel in the Bund, can I take the Maglev and then subway to Hotel?

Yes. You can take maglev train to Longyang Road and then change to Subway Line 2 from Longyang Road to Nanjing East Road. Get out of the subway station from Exit 3 to Henan Middle Road. Then you have to walk a bit along road to find the hotel.
