About:Shanghai Pudong Airport

We will be arriving in Shanghai Pudong (terminal 1) at 4:20pm from Paris (Air France)
Than I have to transfer to flight to Sydney at 7:35pm Terminal 2.

Do I have to clear immigration and collect my baggage from the arrival belt at Pudding Airport and then check in again for the Sydney flight?
I have only 3 hours.

I have Australian passport therefore I do not have to applied for transit visa? is that right?

Yes, you do not need to have a transit visa. I think you need to check-in again. Genreally 2 hours is enough for the transfer at least, so I think it is okay for three hours.
