I'm landing in Hong Kong at 11:15am next Thursday and my flight back home is only at 23:40 that evening. Am I able to leave the airport and then return closer to the time of my flight?Any help is much appreciated.

There is about 9 hr (12:15 - 21:40). The Airport Express MTR train can take you to and from Airport in a little more than half hour.  Since you have only 9 hour, taking MTR (i.e. the underground railway) to SHOPPING areas is the most economical and efficient way.  You can also go to Central and take the peak-tram to the peak. Just remind you to get a VISA (or else, I am not quite sure) to enter HK.  have a nice trip !
