About:Guangzhou Baiyun International Airport

I am resident in China, but now my passport is with the immigration office in Guangzhou to renew my residence permit, can I fly to other city in China using the passport copy and the paper from the immigration office?

Yes, I think it is ok. Except of leaving and entering China, you could use the valid proof document to take domestic airlines.
