What are the Breakfast like at the hotels? Is that American style?

Yes, most 5 star hotels offer American Style Breakfast. Some western 4 star hotels also do that. However, please note that very few 3 star hotels provide American breakfast.

Generally, most 4 or 5 star hotels in China has buffet breakfast, combined with both western style and Chinese style. Some 3-star hotels whose main customers are western people will also supple western style breakfast.
