About:China Tourist Visa

We are planning to start our trip in Guangzhou and end it in Hong Kong, where we fly back to the US (no rentry to mainland China). A friend has told me that we still need a multiple entry visa. Is this true?
Also, we are planning to visit some more rural areas in Yunnan and Sichuan, so we have no hotel reservations for those places--we're planning to find a hotel as we enter each city or town. Will this be a problem when we get our tourist visas?

You don't need a multiple-entry visa because enter China for only once. The proof of hotel reservation and air tickets are not necessarily required for applying for a tourist visa.
