Don, you did not disclose your citizenship and consequently I was thinking that you are a Taiwanese and not a foreigner living in Taiwan. Now I understand that your citizenship belongs to 55 qualified countries that are eligible for 240 hour visa free transit like Indonesia, Mexico, US, Czechia, right?
If this is the case, we have a problem with your itinerary and its secition:
Hong Kong - mainland China - Hong Kong
The basic rule of 240 hour visa free transit requires that the immediate points before and after mainland China are located in two different countries or eligible territories (eligible territories are Hong Kong, Taiwan and Macau). As you can see, your both immediate points are located in just one eligible territory - Hong Kong. This detail makes your itinerary an ineligible one.
In order to make your itinerary eligible one you will have to use Macau or some other eligible territory/ country. For example:
Taiwan - Hong Kong - Macau - Hong Kong - Taiwan
Taiwan - mainland China - Hong Kong - Taiwan
Taiwan - Hong Kong - mainland China - Taiwan
There are many combinations, but using Macau as an option is probably the easiest way because of its proximity to Hong Kong and because Macau and Hong Kong are ideally connected to each other by very frequent buses and ferries. I hope this helps.
