It is easy. The main detail is to insert additional eligible territory, being it Hong Kong or Macau into your itinerary.
For example, you can take a flight from Thailand directly to Shenzhen. Before you perform a check-in in Thailand, you will buy a train ticket from Shenzhen to Hong Kong and have a train booking confirmation on you because you will be asked to present it in both Thailand at the moment of your check-in and upon landing in Shenzhen.
Upon landing in Shenzhen you will fill out arrival card, perform fingerprinting at automatic fingerprinting machine and then you will approach 24/240 hour visa free transit counter. There you will present your intention/itinerary, your train ticket booking and a hotel for your first overnight. After that you will receive a temporary entry permit in your passport and then you will approach the immigration. When you are done with that, you are in Shenzhen and enjoy your time on your own. You are free to visit other places and you are not limited to Shenzhen city only since you are not staying on 5 day Shenzhen VOA, but on 240 hour visa free transit.
When the time comes, you will take exactly that train you have bought your ticket for for Hong Kong. You will then take a flight from Hong Kong to Thailand.
Alternatively you can use Macau instead of Hong Kong. In that case, you will not buy a train ticket, but a ferry ticket from Shekou port in Shenzhen to Macau through TurboJet ferry website that operates the line. From Macau you can take a flight back to Thailand as well. I hope this helps.
