If you plan to fly on a nonstop flight from Canada to Guangzhou, then visit the places in mainland China and then exit mainland China to Hong Kong, your itinerary is definitely eligible for 240 hour visa free transit and you do not need any kind of visa. You can depart from mainland China toward Hong Kong by train or plane, but you will have to buy your exit ticket to Hong Kong even before you board the plane for Guangzhou in Canada. You will be asked to present that ticket at the moment of your check-in for a flight to Guangzhou and also upon your landing in Guangzhou. Have a nice visit to China.
