If you plan to travel from Hong Kong to Shenzhen and then return to Hong Kong, Shenzhen 5 day visa on arrival is a must. If you want to enjoy 240 hour visa free transit you should include Macau into your travel plan and first travel from Hong Kong to Macau, then from Macau to Shenzhen and in the end you will take a train from Shenzhen to Hong Kong.
In my opinion, if you really want to travel to Shenzhen only, 5 day visa on arrival is much better choice. You will take a suburban train (a through high speed train is not eligible for this direction since there is no visa office) from Hong Kong directly to Lo Wu where you will clear Hong Kong exit formalities. After that there is a short walk to Luohu that is a mainland China counterpart crossing where you will apply for a Shenzhen 5 day visa that costs 130 CNY (most overseas bank cards are accepted, debit and credit), but you can pay by Chinese cash as well. You do not have to do anything in advance.
When your stay in Shenzhen is over you will return to Hong Kong by taking any border crossing and any mean of transport, a through high speed train included (it is eligible for this direction because you are exiting mainland China), preferably from very centrally located Futian station. Have a nice visit to Shenzhen.
