Shenzhen and Guangzhou travel by train

Hi there! I am a U.S. passport holder traveling to Hong Kong from India on the 13th of Jan. I depart from Hong Kong to the U.S. on the 21st of Jan. I would like to plan a short visit of just 2-3 days to Shenzhen and Guangzhou as a solo tourist. The ideal way for me to travel would be by high speed train there and back. Currently, the Chinese Visa website is proving to be quite slow, and I do not have a Chinese embassy close to where I'm staying in India. I'm wondering if it would be best for me to apply for a China visa directly once I get to Hong Kong at a consulate or embassy office. Any tips or guidance would be appreciated!
