Mich, your itinerary is eligible for 24 hour visa free transit and you do not need any kind of visa if your transit time (based on your scheduled arrival and your scheduled departure) in Shanghai is shorter than 24 hours. Your right is to travel via China visa free using your itinerary and to stay in the transit zone of Shanghai airport during your layover. So, when staying in the transit zone of Shanghai airport you do not need to perform any formality nor to fill out any forms. You will basically just walk from one to the other gate and you will not be a subject of immigration and customs inspection.

If your layover is longer than 8 hours and especially if it is even longer and during the night, you can apply, upon landing, for a temporary entry permit to be allowed to exit the airport to do some sightseeing and to have an overnight in the hotel. It is important to understand that the granting of a temporary entry permit is never guaranteed since it is a bonus and not a passenger right, but is decided on case by case basis. In order to apply for a temporary entry permit you will, upon landing, fill out arrival card, perform fingerprinting, head to the 24/240 hour visa free transit counter where you will present your flight tickets (it is advisable to have them as printout) and ask for a permit. If the permit is granted, you will head to the immigration and then to the city to enjoy your time on your own. I wish you a nice journey.
