People are using convenient geographical circumstances and the proximity of Hong Kong for more creative ways to use both 240 and 24 hour visa free transit and it really does not matter whether you stay in Hong Kong just one night or more. Everything is perfectly within the accepted legal frames. In your particular case you will be covered by 24 hour visa free transit, but you should be aware that you will just walk from one to the other gate and you will not be leaving the transit zone (airside) of Shanghai airport. Also, you do not have to perform any formality not will you fill out any forms. Also, you will not be a subject of immigration and/or customs inspection. Everything that you will perform will be to cross a security check between the two gates. One more detail... The citizens of Denmark do not need a visa for a stay in China for up to 30 days, so they do not have to bother about 24/240 hour visa free transit because it is not something that is related to them.
