You can obtain a VOA by just applying for him when you arrive at Lo Wu / Luohu border crossing. You will fill out the form, he will take a photo at the crossing from the availabe machines, you will pay 130 CNY fee (only cashless forms are accepted like debit and credit cards) and that would be all that you need. You will be probably asked why did not you obtain a Chinese (Hong Kong) citizenship and the relevant documents for her/him since she/he could be treated as a Chinese citizen that she/he acquired by ancestry. You will reply that you will do that as soon as you find enough free time. They will understand and accept your explanation and will give your daughter/son a visa to cross with you to Shenzhen. By taking a VOA you cannot take your son out of Shenzhen city limits due to the nature of this VOA. When you are done with your visit to Shenzhen you will return to Hong Kong by taking any border crossing and any mean of transport, high speed train included. If you want to visit some other Chinese areas with her/him, you can rely on 240 hour visa free transit as I have explained in detail to Matt, just below your post. These are two good solutions and you will decide which one is more suitable for your needs. Have a nice visit to Shenzhen.
