For example, you can take a ferry from Hong Kong to Macau and take a flight from there to Xiamen. From Xiamen you can return to Hong Kong. Alternatively, you can depart to Xiamen from Hong Kong, but return to Macau and then take a ferry to Hong Kong. If you want, you can take some other territory/country to act as your third country, for example Taiwan. In any case, just take care that the immediate points before and after mainland China are located in two different countries or eligible territories. Two important details to add. You cannot use a high speed train to exit Hong Kong toward mainland China under 240 hour visa free transit, but you can use it to travel from mainland China to Hong Kong. Also, even before you depart from Hong Kong or Macau toward mainland China, you will have to buy your flight or train ticket out of mainland China.
