In general, you are eligible for Shenzhen 5 day visa on arrival, although the mainland Chinese border authorities prefer in the cases as it is yours, a travel with Mainland Travel Permit for Hong Kong and Macao Residents (usually called Home Return Permit). You will be probably asked about your permit and your citizenship, but you will tell them exactly the same explanation as you have done it in your post. You are also advised to think about using 240 hour visa free transit scheme. If you introduce Macau, you can travel Hong Kong - Macau and then by ferry to Shekou (line operated by TurboJet ferries) and you will return to Hong Kong by train. This option is more relaxed because nobody will complain because of your place of birth since there is no visa, but it is considered to be a transit. In other words, you will be just another Canadian transiting though mainland China between two eligible territories. The only drawback here is that you have to buy a train ticket id advance, even before you depart from Macau to Shekou (Shenzhen) and present it in both Macau (at the moment of your boarding) and upon your arrival in Shekou. In other words, you will have to take exactly that train you have bought your ticket for. The good detail is the fact that you are not limited to Shenzhen city limits as you would be with Shenzhen VOA, but you can visit quite a good portion of mainland China.
